Fermentation in stainless steel at controlled temperature (22° -26°, about 72- 78 Fahrenheit). It macerates on lees in stainless steel tanks for 15-20 days at controlled temperature. After the alcoholic fermentation, the wine undergoes malolactic fermentation.
The juice is aged for 12-15 months in French oak barriques.
