After the green harvest done in the summer, grapes are harvested in 25 kg perforated boxes. The grape is kept in a cold room for a couple of days and further selected on a special vibrating table before being softly pressed. The must is transferred into steel tanks where it starts the fermentation process under controlled temperature. No chemical additives are added.Ageing
The wine remain into steel tanks for 2-3 months on its fine lees with frequent batonnage
It normally takes place at the beginning of the year following the harvest.

Ideal for aperitif or paired with starters or first dishes. It better expresses its freshness, if served slightly cool.
